Pasta (when my daughter gets around to cooking it....) with cheese and chive sauce, pepperoni slices, sauteed mushrooms, tomatoes halved and microwaved, and microwaved steamed peas. Everything is ready bar the pasta...... Dunno about afters yet.... we have a variety of things we can use... I did chop up some windfalls today that we'd been given, and I've stewed them up with a little water and sugar, and some blackberries... we still have stewed plums leftover (but only a little), plenty of ice cream.... all the ingredients for pie or pudding or crumble...

We will grill chicken breasts. We have oodles of green beans. Probably bake some sweet potatoes. Perhaps a zucchini, tomato, mozarrella salad? How do you spell that word?

last night ended up in a pizza place with my sister eating pizza, so the bake didn't go to plan and I have forgotten to get out mince so it's going to be jacket potato with salad or cheese and beans.

Monday night was Chicken Enchiladas & salad. Last night was Date night w/ hubby ~ out for Chinese. Making Pork Roast w/gravy, mashed potatoes, green beans or asparagus for supper. I think I may try to make a fresh tomato & mozzarella salad as well.

Fresh lemon - you need to zest it (grate the rind, just the yellow) then juice it. The recipe uses the zest and the juice. Butter for sauteeing. Tomatoes - one regular size one per person, chopped. Sultanas (seedless raisins) - One generous handful. Curry powder - I use mild or medium depending how spicy the people eating it will prefer. One tablespoon. Fresh coriander leaves - absolutely essential to use fresh, not dried. If you can't get fresh, use the ready chopped stuff from a jar. Fresh leaves, you need about a tablespoon all chopped up. Out of a jar I use a tablespoon (it is about the same equivalent.) However, I love coriander so much and I will buy a fresh bunch and use the whole bunch. Salt to taste. Parsley - just a little. I use dried chopped. Hard boiled eggs - 2, quartered, these are for garnish. Honestly, you can really mess around with this recipe. First time you make it just use what I said, then if you find you like/dislike something you can adjust it next time. I have forgotten the sultanas once and it was fine, but it's definitely better with them. And another time I forgot the garlic, and yet another time I forgot the parsley. And quite often I don't bother with the eggs (but they do go really well with it) So..... on to how to make it. It's really easy :) Just boil/cook the rice. I heard years ago to use 2 1/2 x the volume of water than rice, boil it up then simmer it covered until the water is absorbed. Works for me every time. Never sticks :) While the rice is cooking, you can get everything else ready. If you are using the eggs, you need to get them boiled also while the rice is cooking. (When they're done, I always rinse them under cold water, then sit them in cold water for a few minutes. This cools them down quicker and helps prevent the yolks going grey.) So, while the rice and eggs are on.... Melt the butter in a good sized frying pan. Saute the onion in the butter until softened. Stir in the garlic and the lemon zest, the lemon juice, the curry powder, the parsley and the tomatoes. Simmer for a few minutes so it goes 'wet' from the tomatoes disintegrating :) Add the fish and the sultanas, heat through, stirring. Also stir in a little salt if you like. Add the yummy coriander :) Stir it in, then mix all of it with all of the rice. Serve it up (pasta plates are good) and garnish with the egg quarters. So, onto what we had/are having tonight (we are inbetween courses :) ) Roasted chicken thighs, with chips, mixed green salad, coleslaw, mini corn-cobs, carrot sticks. Blackberry and apple sponge pudding. I'm having whipped cream on mine (the aerosol stuff :) ) eta: We had garlic bread too - it shouldn't matter but it's bugging me *lol*

Weight watchers from Heinz - beef and red wine casserole. I'm hungry, tired and there's only me so it's a quick 6 minutes in the microwave. But it's only 250 calories so I know I'll need something else afterwards...

I have leftover grilled chicken breasts so may make a salad. Also got out some ground beef and have eggplant so may make eggplant parmesan as well. And we still have oodles of green beans and cantaloupe/blueberry salad.

Made Chicken Brats, baked beans, potato salad and chips for supper last night. I'm not sure what I'm having tonight for supper ~ my hubby and boys are going camping tonight, so I'll be by myself. I may meet my Mom for supper. :)
