Anyone here use a dutch oven? Is it fantastic? Or eh...? Does it really matter if it's cast iron or porcelain? And what do you cook in it?

I always thought "Dutch Oven" was code for 'really big pot'.

I think that original Dutch Ovens were flat topped cast iron pots that you put coals on top of and set in or on top of coal in a fire pit as well... today's version is usually a "really big pot" .

The cast iron or porcelain covered cast iron is usually considered best because of the even cooking the cast iron give. They make great pot roasts, stew, stuff like that.

Plus you can put them in the oven. I have 4, a 2.5 qt enameled cast iron, a 4 qt enameled cast iron, a 4 qt T-Fal non-stick that gathers dust, and a 5 qt Revereware stainless steel one. All but the T-fal get heavy use.

You're right about the originals, they had flat tops so that coals could be piled on top.

Some day I would love to have a LeCreuset dutch oven, but they are a bit pricey.

I did a quick google search just putting in "Dutch Oven" and found a few websites with recipes and info.

I love dutch ovens!

But don't have a clue about porcelain...

Dutch ovens are great for doing slow-cooking stews in the oven, but here's a really neat thing if you have several that have feet and a up-rising flange around the lid: you can stack them and cook several things at once on camping trips. How cool is that???

You can start some coals, put a few on bare ground (some people have it down to a science how many coals to use; I don't know) next to a rock or two, brown some chicken in a dutch oven and then add stew veggies and broth. Add coals on top and stack a second dutch oven on top with bread in it, put coals on top of that. Then put another dutch oven with blackberry cobbler on top and put coals on top of that.

A hearty dinner with bread can be served to a lot of people, and then enjoy dessert.

I have an old dutch oven that I got in a thrift store for pennies; and I bet I use it once a week during winter. If we get our solar oven working, we'll use it in that in summer, too.

A dutch oven in a stove or a crock pot with an electric outlet pretty do the same job, only it's easier to brown meat and sautee veggies in the dutch oven. If the power goes out, build a fire and stick the dutch oven on a grill over it (or hang it from a metal rod with a metal hook).

I have a cast iron dutch oven I use for camping and I use it in the fire--I make all kids of stuff in it--stews, potatoes, desert---I had one BF that I used in the kitchen--It is a nice big pot with a rounded lid--its like a giant slow cooker--put a chicken in it, or roase, stew, gabbage casserole--what ever fits!! Mine was a six quart kettle with a rounded lid--

Oh, I had so wanted a dutch oven. And I ended up getting a Le Creuset and I absolutely love it.

But be careful if you purchase one with a coating. I had read that the ones from China had lead in them (or at least some of them). So I decided that I would get a Le Creuset when I got one.

I found a second at TJMaxx for about $115. I used some money I'd gotten from a garage sale for my splurge. I have no regrets. It cooks consistently, evenly, and I have yet to be disappointed with anything I cooked in it. The only draw back is the weight. It is heavy. But I consider it my upper body workout.

True, even the Lodge and Food Network brands are very heavy - even before you get your food into them!

The LeCreuset's and other enameled/porcelain coated units are nice for high acid cooking like chili's or things braised in wine. Regular cast iron doesn't like high-acid foods very much. It tends to corrode the pot and can give food a metallic flavor.

FYI - for camping, I like the ovens with legs and a flat lid. 12 charcoal bricks on the top and 9 bricks on the bottom gives a nice 350 degree oven inside. I've done baked chicken, roasts and even cooked pies in them by lining the bottom of the oven with very small stones.

I like a Dutch oven for camp cooking but I hate to use my stove oven at home because it burns up so much power and my power bills are incredible as it is.

i got a cast iron dutch oven along with a cast iron skillet from amazon for about $20. one of the best kitchen items i ever bought. i always use it in the oven. just set it and forget it...until the timer goes off.
i highly recommend it, especially the plain cast iron one...they're cheap and last forever...with proper care.

That's the way we used a Dutch Oven when I was growing up.

I have a 9 quart Le Creuset I picked up at the Hells Kitchen Flea Market. They're wonderful.

dh likes pot roast - I brown 2 roasts and onions in the iron Dutch Oven, cover and cook in a low oven. . Only thing is for spaghetti sauce (acid) I oil the pot well and take it out as soon as it's cooked.

THANKS! I've seen a few at thrift stores, none of the cast iron ones. A few no-names (or so it seems, I can see no 'name') and a few 70s looking ones with the floral motif. Also, I saw a Vitrex Gormet (Spain) with porcelain interior.

Back to looking, I'd love to find an enameled cast iron!!! (Problem is I'm cheap!)
